Nisin is a peptide,natural fermentaion product produced by strains of lactococcuse lactis subsp ,it is a safe, natural preservative effective against Gram-positive bacteria, including heat-resistant spp.

Nisin

Nisin inhibits the growth of a wide range of gram-positive against some heat-resistant spore-former bacteria such as Bacillus stearothermophiluse, Bacillus cereus and Clostridium botulinum.
Nisin reduces the thermal processing temperature and/ or time and minimizes loss and improves food quality and shelf life
